About
Biswanath Pal of Panjia village in Keshabpur upazila, Jashore, makes ice cream at home from his wife Kakoli Pal's recipe and sells it from a small shop attached to his house in Panjia bazar. Twenty to twenty-five years ago he opened the shop in front of Panjia Secondary School selling branded ice cream; when company representatives would not supply as much as the students wanted, he stubbornly started making his own. At first plain milk-and-sugar ice cream sold poorly; then, on Kakoli Pal's idea, he added cashews, raisins, sandesh and milk cream, sales rose sharply and it became known as 'Boudir Ice Cream'. It now takes a maund of milk a day: the milk is boiled for two and a half to three hours until reduced by half, sugar, sandesh, cashews, cream and raisins are added and it is boiled again, then cooled, poured into disposable cups and frozen overnight. They sell 400-500 cups a day at Tk 10-20 a cup depending on size, earning a profit of Tk 2,000-3,000 a day. People come from Keshabpur and neighbouring upazilas to eat it.
