About
Motiur Rahman's singara shop stands at Bakultola junction on the Tangail-Aricha road, about seven kilometres south of Tangail town. His father ran a small sundries shop there; when his father died 25 years ago he took it over, and a few years later began selling tea, singara, puri and peyaju. As his singaras became famous and demand grew, for the last few years he has sold only singaras: 800 to 1,000 a day at Tk 10 each. In the morning he and his wife cook the potato filling and knead the dough at home; after midday he starts frying at the shop with his two sons, Nirob Hasan and Rifad Hasan, until 8 or 9 pm. Passing vehicles stop and people buy five or ten at a time, and people come from town too; the junction is now known as 'Singara junction'. Motiur says he changes the frying oil every day or two and the whole family makes them with care. The shop supports his family of eight.
