About
For about 10 years Rehena Begum has run a singara and potato-chop stall under a tin shelter on the bank of the Chitra river at Dhalgram sluice gate in Bagherpara upazila, Jashore. She used to work in the government's employment-generation programme and as a day labourer, and opened the stall because regular work was hard to find. She opens at 8 am; her husband Murad Hossain Fakir, a van driver, helps prepare the ingredients before going to work, and sales continue until 8 pm. On ordinary days she fries 150 singaras, peyaju from 2.5 kg of flour, 1 kg of chickpeas, 1 kg of potato chops, beguni and papad; on Dhalgram market days (Saturday and Wednesday) she makes 400 singaras. Everything is fried over a wood-fired clay stove, and customers eat on benches. After costs she earns Tk 300–350 on market days and Tk 200–250 on other days; the stall rent is Tk 300 a month.
