About
Shingara House in Rangpur town was started in 1960 by Kanailal Sarkar; it is now owned by his son Bhabatosh Sarkar, who runs the family business and keeps the recipe secret. Famous for its shingaras for 63 years, the restaurant is not grand but small and somewhat worn, with small tables and chairs inside and out, and is always crowded. Before you even order, a steel plate arrives with four small shingaras and a distinctive liquid sauce; the writer believes a special spice goes into the potato-vegetable filling. Shingaras once sold four for a taka, later at eight anna and one taka each; the price is now five taka. Rangpur's well-known writers, cultural figures and politicians once gathered here.
