About
Pal Mishti Bhandar in Harbang Bazar, Chakaria upazila of Cox's Bazar, has sold only rasgolla and nimki for 50 years. Its owner, Usha Ranjan Pal (82), learned the trade at 14, working from 1958 in Rebati Dutta's 'Dutta Mishti Bhandar'; in 1972 he bought that shop and renamed it 'Pal Mishti Bhandar'. The rasgolla is sold not by weight but by the piece, at Tk 12 each (it once cost one anna). It is made from chhana, sugar, cardamom and a little flour (20 g per kg of chhana), with the milk split using lemon juice and cooked on a clay, wood-fired stove; 40 kg of milk yields only 300 sweets. Depending on milk supply, 15–20 kg of sweets are made a day, more for wedding and milad orders. Buyers come from Chakaria, Pekua, Lohagara, Satkania and Lama, often queuing. The workshop is behind the shop; Usha Ranjan still makes the sweets himself, with three employees.
