500 boxes at 99-120 taka, and 30-40 lakh to build the kitchen
A commercial kitchen in Tejgaon cost 30-40 lakh taka to set up and sends out about 500 boxes a day at 99-120 taka each, taking around 10 lakh taka a month. With oil up from 115 taka to 170-180, home kitchens have had to lift their meal price from 80-90 taka to 110.
This report covers several small kitchens delivering lunch to Dhaka offices. A commercial kitchen in Tejgaon was set up for 30-40 lakh taka, sends out about 500 boxes a day at 99-120 taka each and takes around 10 lakh taka a month. Another, started in 2021, still cooks 170-180 meals a day in a home kitchen and has raised its price from 80-90 taka to 110; its founder says the orders now coming in can no longer really be cooked at home. Two further operations serve four or five offices at 100-150 taka a meal and are holding their prices to keep customers, even though cooking oil has gone from 115 taka to 170-180. The demand is not the problem; the fixed price point is. Profit figures, and how long any of them took to reach first income, are not given.
Lessons
- 1.A fixed meal price is a promise made to an office for months, so every input rise comes straight out of the margin
- 2.The jump from a home kitchen to a commercial one is the real decision here: 170-180 meals a day is already past what a home can hold
